A zucchini crusade

Our garden is becoming a bit of a problem. Our summer squash plants have grown beyond our control, producing with wild abandon, completely taking over my kitchen counter…

Okay, I guess it’s not really a problem, more of an embarrassment of riches. The picture above was harvested over the course of about a week. I’ve got zucchini coming out my ears, so I decided it was time to do something about it!

I am now on a noble crusade. A mission to cook as many varied, interesting, and delicious zucchini recipes as I can muster. I’ve gathered a collection of about 30 recipes to start with, so I’m already well on my way. And since I know I’m not alone in my overabundance of squash, I’ll post all my recipes here, to help others who may be helplessly suffocating in a mountain of zucchini.
