Zucchini hummus

Another great zucchini dip! This time in the form of hummus…

Take any hummus recipe you like, remove the chickpeas, and substitute zucchini. Easy-peasy! Here’s the recipe I used:

1 lb zucchini, seeded and chopped
ΒΌ cup tahini
2 tbsp extra-virgin olive oil
1 clove garlic
3 tbsp lemon juice
2 tsp cumin
1 tsp coriander
Salt, to taste
Red pepper flakes, to taste

Place all ingredients in a food processor. Process until smooth. Serve with pita wedges or crudite.

Tastes similar to regular ol’ hummus, but a little fresher and greener. Also, it’s thinner and more dip-like than a paste-like hummus. Just another way to use up all that zucchini from the garden!
