Zucchini waffles

Just for the heck of it, I made zucchini waffles this morning. Because… Why not?
You’ll need a waffle iron for this, so just follow the instructions that came with it for cooking. Here’s the recipe that came with my waffle maker:
3 eggs
1 cup milk
½ cup melted butter
1 tbsp vanilla extract
2 cups flour
½ tsp salt
1 tbsp baking powder
2 tsp sugar
Beat eggs in a bowl until thick. Beat milk, melted butter, and vanilla into eggs. Combine remaining ingredients in a separate bowl. Mix dry ingredients into wet ingredients. Pour approximately ¾ cup of waffle batter onto the griddle and bake.
Okay, so to make these “zucchini waffles,” I added 1 small shredded zucchini, ½ tsp cinnamon, and a dash of nutmeg. They actually tasted a lot like zucchini bread! Serve with butter and maple syrup. Yummm!
